Carrot Cake- truly the BEST EVER made without the gluten!
This cake started with my mom. After years of playing with her original recipe and measurements, the final result is an absolutely delicious combination including pineapple, walnuts and coconut, all mixed together with a whole lot of carrot. Layered with plenty of the best cream cheese frosting, this cake is bound to be as popular with your family as it is mine.
Three layer 8" cake. Easily serves 8-10, but we easily get 12 or more servings out of it.
