Hummingbird Cake - old-fashioned and classic
Straight from my Grandma's Southern Indiana roots. I start with a banana cake and shuzz it up with pineapple, coconut, pecans and a whole lotta love. Can be made without the coconut if you prefer. Dense, moist, yummy and layered with lots of delicious cream cheese frosting - enough for icing with every bite!!
Three layer 8" cake. Serves 8-10 with generous portioned pieces with plenty left for breakfast! . This cake is so dense it will serve our family of 12 or more at Sunday Dinner.
